Home Fries

Home Fries

Serves: 2-3

Time: 20 +about 5 mins frying

Kid Friendly Tasks: Sprinkling on the toppings

I think I love home fries even more than I love hash browns (and I love hash browns a lot). To me, home fries seem less greasy and you get that nice potato chunk with your fork vs the straight crispiness of hash browns. Home fries also take less hands on time to make and make (somewhat) less of a mess when frying. They are just a more forgiving side dish overall. Typically, what I do…

Dessert Crepes

Dessert Crepes

Serves: 4

Time: 5 mins prep + 4 hr resting

Reheats: Yes

Kid Friendly Tasks: Stirring the Batter

Old School Eggplant Parmesan

Old School Eggplant Parmesan

Serves: 4

Time: 15 mins prep + 30 mins cooking

Reheats: Needs extra sauce

Kid Friendly Tasks: Adding Cheese

Spinach and Cheese Crepes

Spinach and Cheese Crepes

Serves: 4

Time: 20 mins

Reheats: Yes

Kid Friendly Tasks: Adding Ingredients

Crepes are a great go-to dish to master because they are so flexible. You make them very much as you would a pancake, but you can put anything in them. The savory version can have spinach and cheese, ham and cheese, chicken and mushroom, you name it. It’s a great way to turn odds and ends into something tasty…

Simple Homemade Mac and Cheese

Weeknight Macaroni & Cheese

Serves: 4

Time: 20 mins

Reheats: Well

Kid Friendly Tasks: Adding Cheese

I make two versions of mac and cheese (neither of which come from a blue box, although my daughter swears that’s her favorite, sigh). One version is a true baked mac and cheese with a buttered breadcrumb topping. It’s very good, but it’s an hour in the oven alone and most night there simply isn’t time for that. So instead I fall back on my old favorite stove top version…
