Sweet Kolaches

Sweet Kolaches

Serves: 4

Kid Friendly Tasks: Jam Spreader

Several months back we tried kolaches as a fun treat. They are new to Columbus (if you’re from Texas don’t laugh at me) and tasted good, if slightly pricy. The bakery we went to sold a sweet and savory version. I made the savory version for dinner with the leftover sausage (which, alas turned out only okay, but I’m not sure why exactly.) and the sweet version the following day filled with my lovely peach butter. Peach butter is thicker than regular jam, has a more even consistency and is slightly less sweet (My husband complained that my peach jam was super sweet, teeth shatteringly so. I pointed out that I used a full cup less sugar than the recipe called for. My kids, BTW have no such objections to the stuff.) The sweet version were excellent. Soft, lovely and a perfect marriage with the peach filling. These are definitely on my breakfast list.

Classic Fried Rice

Classic Fried Rice

Serves: 1-2

Time: 5 mins

Freezes: Yes

Reheats: Yes

Kid Friendly Tasks: Mixer

So what to do? Well, make fried rice for lunch of course. The kids will eat something else and this is perfect for one person. I make mine vegetarian, but you could add any meat you have on hand. The classic addition of course is shrimp, which I love, but don’t ever quite seem to buy for whatever reason. Anyway, this cooks in 5 mins or so and we always have the basic ingredients on hand. This is your lunch today, just trust me.

Loukoumades

Loukoumades

Serves: 4

Time: 1 hr

Kid Friendly Tasks: Toppings

I am not a huge donut fan actually (They are often too sweet for me.), but these are simply amazing. Light, sweet and a bit like donut baklava with the honey/cinnamon/walnut combination on top. I would go just to eat my weight in these. Since, fortunately for my waistline Greek Fest comes but once a year, I’ve found this excellent at home version of Greek honey donuts instead. Make a mess and try these TODAY. They are so good you can even eat them the next day if you cover your bowl with plastic wrap. Now that’s a good donut.

Basic Pizza Dough

Basic Pizza Dough

Serves: 2-4

Time: 2 hours

Freezes: Yes

Kid Friendly Tasks: Kneader

So my crew loves pizza, particularly my middlest. He would happily eat takeout pizza every meal (interspersed with beans and weenies of course, get that extra fiber in there from the bean, right?) I dislike most “standard” pizza joint pizza. I know that seems like a terrible thing to say, who doesn’t eat pizza and I do and I will, but the fresh stuff, either from a real pizza kitchen or home is just so much better! To that end, I have perfected this awesome dough recipe.

"Destroyed" Green Beans

“Destroyed” Green Beans

Serves: 4

Time: 2 hrs

Freezes: Yes

Reheats: Yes

Kid Friendly Tasks: Bean Eater

Okay so right off maybe that’s not the best title. Maybe I should call them something like, soft green beans, slow cooker green beans, green beans that taste like they are from a can, but without all that added BPA. However, in my family that’s what we call them. These are the beans that are so soft that my baby can eat them (and does, my littlest adores these beans and will down a whole pile of them). These are the beans my husband likes with Thanksgiving or really any time it’s cold out.
