This is my youngest’s chosen birthday cake. He told me that for his birthday he wanted “soup and cake” (apparently we do eat a lot of soup) and the first time I made this cake he and I couldn’t stop eating it. The cake is super sweet because of the caramel swirl layer. I love that part (I keep digging for more caramel), but if you don’t like super sweet cake you might think this is a bit over the top. It’s so rich and creamy it’s almost a pudding cake.

This is a complex dish. I’ll say that right off. However, I try to simplify by making extra filling and then freezing it so that you just need new eggplant and sauce. It’s totally worth it though and is my go to dish when company comes. You can make it in the morning and just put it together an hour or so before they arrive. Then it cooks, quietly waiting for you while you deal with other things and visit.

If I ever write a cookbook someday I swear it will be called Soup and Pie, A Recipe Collection. I seem, more often than not to fall back on these two easy, homey types of foods. I love that you can feed a lot of people with them (or have lunch for a week). I love that they are cheap and reasonably healthy (before you laugh out loud I would suggest that a fruit pie without a double crust is slightly better for you than a cake slice layered in buttercream, though I grant you that it’s a close run thing.) and let’s face it, who doesn’t love these two food? Today’s soup is an Italian classic, minestrone.

It’s so basic I can’t even get a good photo of it, but leek and potato soup is a fall and winter classic. This is one of those recipes that I’ve had literally forever and make whenever the leeks look good at the farmer’s market. It’s warming, filling and calming and would go great with crumbled bacon on top. I particularly like this version of this recipe because it’s not too heavy.

My littlest is a total chocolate nut. This is his go-to sweet of choice over all others. In fact he asked for chocolate cake for his birthday and Hershey kisses for his lunch. He was completely crushed when Meijer’s’ (admittedly tragic in my book) free giveaway cookie of the week turned out to be some sort of vanilla cookie with white chocolate chips. White chocolate does not count as chocolate in his book (or mine for that matter. It’s not a bad dessert product, but it’s not chocolate). To soothe his tears, and because I happen to like a good chocolate cookie myself, I proposed this double chocolate cookie instead.
