This is my favorite comfort food. My children refuse to eat my mac and cheese because it doesn’t come from a blue box, but this, we all agree they will eat. It is warm and homey and makes a ton. I like to choose a day when the weather is totally terrible outside anyway and fill the house with the smell of baking chicken. The only thing this recipe takes is time to make. Preparation is straightforward enough. Be careful when adding the broth to the flour/butter mix because it will steam like crazy. I’ve given myself some nasty steam burns this way. Otherwise, it’s easy to make. I serve mine over either hot biscuits or mashed potatoes. Then I freeze whatever’s left for the next day when I just want something warm and hot and bubbling.

I got this cute heart shape cake mold at least 15 years ago on a Valentine’s Day whim. At the time I was making things with a Valentine’s Day theme. Now, alas 10 years of marriage and three kids has sort of taken that to a standstill. I still kept the mold though and I did find the time to make these cakes. These are really a light sponge cake, not a brownie, although I like brownies a lot in this pan too. Now I make the little heart cakes for my kids and sometimes fill the center with either cream or frosting.

Calzone

The secret to these is a lot of cheese and very little sauce. I make my regular sauce recipe but just dip my calzone in it when they’re finished. I use a lot of the different cheeses and just a hint of veggies and pepperoni. I haven’t included quantities here because it’s very much about what you love to add. Sausage for example would be amazing in these. Just add slightly less filling then you think looks right, fill with your favorites (or my favorites below), crimp and enjoy.

Lazy Cabbage Rolls

This past weekend was the first for cabbages at the market (mine are starting to head up at home as well, yea!) and they were two dollars for a massive cabbage. Also my favorite vendor had ground lamb for sale at last and I really prefer ground lamb to ground beef in a lot of recipes. (think karnyarik or musaka, both lamb and eggplant delights) I had to get both. Then I was faced with the challenge of what to make. I remembered again my Russian friends and their many recipes for “lazy” cabbage rolls and decided that was far and away the way to go. Instead of steaming off each individual leaf of the cabbage I used my mandolin to shred the cabbage head coarsely. Then I layered cabbage, filling, more cabbage and tomatoes. Excellent and so much faster to make. Also, because the cabbage was mixed in my children were forced to eat it vs their usual method of peeling off the cabbage and only eating filling. Damn I’m sneaky.
