Raspberry Custard Pie

Raspberry Custard Pie

Serves: 6-8

Time: 1 hr

Kid Friendly Tasks: Adding Filling

So this is clearly the part where I flood the site with black raspberry recipes. In our case, we have a ton of wild black raspberries that grow in our yard, although we also like to go out and pick berries commercially too. I love my classic black raspberry pie, but I’m always up for something new from my cookbook collection or the web. This one was fun to try because it had a different filling which made it almost like a varient on raspberry cream pie (also good, BTW). You can use either black or red raspberries in this.

Kid Friendly Tasks: Adding Filling

We had a bumper year of raspberry picking last year, which is great because I love raspberry, they are some of my favorite berries (although to be fair I don’t know that I’ve ever met a berry I don’t like) and I enjoy picking in general. This year we went a little nuts and picked 13 lbs of berries. I made a lot of seriously awesome pie and will post that recipe soon. I also made jam and pie filling. Oh and these lovely pastries.

Cucumber Salad

Cucumber Salad

Serves: 4

Time: 10 minutes +1 hour sitting

Kid Friendly Tasks: picking cucumbers

Summertime and the cucumbers are cheap, plentiful and fresh at the market. They make a lovely cooling, crisp summer salad. The salad below is one of my favorites to make each summer. It pulls together quickly although you absolutely have to remember to mix the cucumbers with the salt ahead of time. Otherwise they dilute the dressing too much once the salad has sat for a while and then you get soup. This salad keeps for about a day after it’s made. I like to serve it with shashlik or mousaka, but it would be lovely with anything.
