Basic Brownies. The title says it all. These are the brownies that you make when you just want something basic, chocolaty and comforting. They haven’t been dressed up with nuts, caramel or frosting. They are simply good brownies, the kind that everyone loves to eat. I actually make these fairly regularly because they are so low key. I like the fact that the recipe only makes one 8×8 pan’s worth as a little brownie goes a long way, plus they stay fresher this way. As I’ve mentionedб I’m a strong proponent of halving dessert recipes so that the dessert, however good, doesn’t linger about. Lingering is bad for the hips and besides, who wants to spend the calories on stale brownies? Better to make a different kind of cookie and have something new for dessert. Also to note about this recipe is that these are not cake like brownies. They are fudge-like and thick. They take forever to cook because of this (I had to double the cooking time in the original recipe. How it was that far off I have no idea, although I also didn’t line my pan with foil). I eat my brownies straight from the pan and don’t care about pretty when it comes to popping them out. If you do, I highly recommend choosing a non-stick pan to make that task easier or at a minimum cutting them just shortly after they have cooled and popping them out of the pan.




Kid Friendly Tasks: Chocolate Taster


  • ¾ c flour
  • 1 ½ c powdered sugar
  • 2 tbsp cocoa powder
  • ¾ ts baking powder
  • Pinch salt
  • 1 1/3 c semisweet chocolate
  • 6 tbsp unsalted butter
  • 1 ½ tbsp corn syrup
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • Drop almond extract


  1. Preheat oven to 350.
  2. Butter 8×8 baking pan.
  3. Heat butter and chocolate over lowest heat (I use a double boiler) and mix until both are melted together (It doesn’t take long). Add in corn syrup and let cool. Then add eggs and vanilla and almond extract. Gradually add in the salt, then baking powder, then cocoa powder, powdered sugar and finally flour, beating well with a fork after each addition.
  4. Pour batter into prepared pan and smooth out top.
  5. Bake for 30-35 mins or until toothpick inserted into the center comes out clean.

Makes approx 12 small brownies. Serve with a generous amount of vanilla ice cream.
