Basic Pizza Dough

So my crew loves pizza, particularly my middlest. He would happily eat takeout pizza every meal (interspersed with beans and weenies of course, get that extra fiber in there from the bean, right?) I dislike most “standard” pizza joint pizza. I know that seems like a terrible thing to say, who doesn’t eat pizza and I do and I will, but the fresh stuff, either from a real pizza kitchen or home is just so much better! To that end, I have perfected this awesome dough recipe. It creates exactly enough for one thin crust 14 in pizza, holds toppings well and doesn’t puff up too much. I quite often double or triple the recipe, freeze it and then, bam Friday night pizza night has everything ready to go when I get home, just add toppings. As you’re planning please keep in mind that this dough needs an a few hours to rise so if you make it the night you’re using it, plan in that extra time. That’s the other reason I like to freeze it after the rise stage, then it’s totally ready for a fast dinner. This dough can also be used to make an excellent calzone.

Ingredients

  • 1 c all-purpose flour

  • 2 tsp olive oil

  • 1 tsp active dry yeast

  • 1/3 c warm water

  • 1/2 tsp salt

 

Directions

  1. In a bowl, dissolve the yeast in the warm water. Set aside until foamy (about 10 minutes).

  2. Meanwhile, add all of the dry ingredients to a bowl and blend well (you never want yeast and salt to touch directly as salt kills yeast). Then and your proofed yeast and mix to combine.

  3. Knead dough by hand for about 15 mins or until dough is smooth and satiny. If using a stand mixer about 10 mins on low speed. Check your dough often as it’s easy to overmix by machine.

  4. Place dough in a bowl. Brush dough with olive oil, cover with a damp cloth and let rise at room temperature until doubled, about 1.5 hours.

  5. Punch down the dough, reshape into a ball and let rise a second time until doubled, about 40 mins.
