As you’ve probably noticed, I’m not a huge beef fan. It’s really heavy and can be quite bad for you. Beside that my husband once did a project at work on mad cow disease and he’s not been the same since. However, I do like stroganoff which just proves there are exceptions to every rule. In this case years ago at school we did a round the world pot luck (I brought watermelon fruit salad. I have no idea why or for what country) and someone’s mom made a crock pot of homemade beef stroganoff that was really excellent (at least my memory of it was) I’ve been trying to recreate that taste ever since. (Someone else also brought take out chicken wings from Roster’s I remember, but again I have no idea what the logic was there. As a parent I’m guessing it was some mother saying hell I’m not cooking something for your class so what can I get quickly and cheaply to send it so I can be done with this stupid project. At least, that’s what I’d be saying if it were me. Did I mention I’m not a fan of parent homework, but  I digress) The recipe below and my experiments with it are a way back into the past. I hope you enjoy it as much as I do.

Note: If you like a slightly thicker sauce add a bit of cornstarch at the end. Mine tends to be on the thin side. If you like a lot of beef double the amount used, but don’t change the amount of sauce, you won’t need to. This reheats particularly well BTW.

Ingredients

  • 1 lb beef sirloin
  •  2 tbsp flour
  •  1 onion
  •  1/2 lb (or more) mushrooms
  •  6 tbsp butter
  •  4 c beef broth
  •  2 tbsp dijon mustard
  •  1 c sour cream
  •  salt and pepper
  •  1 tsp sage
  •  1 tsp paprika
  •  1 tsp dill

Directions

  1. Brown meat in butter on all sides over medium heat. Add onions and mushrooms and brown, approx 5 minutes. Add in flour and sprinkle evenly. Cook further 2 minutes. Add broth, mustard, sage, paprika and dill.
  2. Bake, covered in a 350 degree oven 1 hour or until meat is cooked through.
  3. Cook over medium heat on stove top, uncovered an additional 20 minutes (you are reducing the liquid). Once most of the liquid has boiled off, turn off heat and add sour cream. Stir to combine and serve over fresh egg noodles.
