As I have so often said, I miss going out to eat, truly I do. The fact that someone else cooks the meal. The fact that I have to wash up nothing. The fact that I get to eat things I don’t normally make (like dishes loaded with cream and butter, yum!) Alas, but having small, young children means those days are behind me now. No one actually wants us to eat out anywhere, ourselves included so I continue my quest to make all of my old favorites. Up to today, Bravo’s creamy Arrabiata style sauce, normally served with shrimp for them, but I’ve subbed chicken in my version because my kids like it so much. This recipe is a dead ringer for theirs. The amount of cream in it reminds me why I really shouldn’t eat out often. Still the taste is amazing and you do get to eat a lot of good for you spinach (which I believe the Bravo version does not have.) Mix up a light salad on the side and you have yourself a winning, kid friendly dinner. Just make something rich and chocolaty for dessert and you’re all set.

Ingredients

  • 3 tablespoons olive oil
  • 3/4 lb chicken breast
  • 1 teaspoon paprika
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1 15 oz can diced tomatoes, drained
  • 1 lb box of spinach wash and chopped (do not use frozen!)
  • 5 garlic cloves, minced
  • 2-3 whole red peppers
  • 2 strips of bacon
  • 1 and 1/3 cups half and half
  • 1/2 cup Parmesan cheese
  • 1 green onion, chopped
  • 2 tsp sugar
  • 1/4 c finely chopped parsley (or 1 tsp dried)
  • 1 lb box of pasta

Directions

  1. Make pasta per package instructions
  2. In a large skillet, cook bacon over low heat, dice and leave in pan. Add olive oil, turn heat up to medium and sear chicken breast on both sides. Slice chicken into chunky strips and keep cooking until no pink is showing. Add paprika, thyme, oregano, basil.
  3. To the same pan add spinach, garlic, sugar, green onion, red pepper and parsley. Cook until spinach wilts. Add diced tomatoes and cook.
  4. Add half and half and bring to a boil. Once boiling add parmesan cheese and lower heat. Add salt and pepper as needed.
  5. Toss with pasta and enjoy!
