I have lots of chicken recipes to post. It’s cold and so we’re doing a lot of different variations on roast chicken and all of its other uses. However, to break the soup monotony today’s recipe is for calzones, which happen to be a pizza variation that I love. The secret to these is a lot of cheese and very little sauce. I make my regular sauce recipe but just dip my calzone in it when they’re finished. I use a lot of the different cheeses and just a hint of veggies and pepperoni. I haven’t included quantities here because it’s very much about what you love to add. Sausage for example would be amazing in these. Just add slightly less filling then you think looks right, fill with your favorites (or my favorites below), crimp and enjoy. They beat hot pockets any night of the week.

Ingredients

  • One recipe pizza dough
  • One recipe pizza sauce
  • Ricotta
  • Mozzarella
  • Carmalized onions, bell peppers
  • Oregano
  • Olive oil
  • Sliced tomatoes
  • Garlic
  • Pepperonis
  • Parmesan cheese
  • Dash salt and pepper

Directions

  1. Preheat oven to 475. spread dough in 13x 16 rectangle.
  2. Pour 2-3 tbsp sauce onto dough and spread to 1 in of the edges on half the dough. Pile 2-3 tbsps onions, sliced tomatoes, olives, pepperonis onto half of the dough. Add all three kinds of cheese and sprinkle lightly with oil, salt, pepper and oregano.
  3. Fold dough over onto ingredients and seal with a fork. Pinch tightly or filling will leak.
  4. Bake at 475 for 15 mins. Note: I bake mine in a high sided dish because mine leak and smoke otherwise.
