I love biscuits. Who doesn’t? Butterwise they should be considered a dessert. They are that rich, but I like them anytime and often make them as a side for roast chicken or beef stew. Mine alternate between drop biscuits (lazy biscuits which is totally me) and proper rolled out biscuits cut with a cutter. Probably you will only want one as they can be light, but heavy, if that makes an odd sort of sense (there are several tablespoons of butter in each biscuit so one per guest is probably enough). The recipe below doubles well and is actually halved from the original.

So I’ve mentioned that I might be addicted to PostCrossing and have been using it as a fun source of new recipes. Well I’m super excited about today’s recipe because it is for fabulous waffles and comes straight from the source. I got this recipe from a Postcrosser in Belgium and true to her non-American nature she recommends serving them with powdered sugar, whipped cream and fruit or ice cream and chocolate sauce. I have since enlightened her as to the wonders of maple syrup.

We have a restaurant in town that serves my husband’s favorite pancakes- light, fluffy and very rich. They do a beautiful pancake with banana slices on top and real maple syrup. However, it’s also $11.50 for three pancakes which is seriously steep (it must be those two banana slices on the top that throw them over). You don’t even get bacon! Those prices mean that if we feed me plus the kids we’re suddenly talking $50+ for breakfast and that’s a bit rich for my budget (not to mention my waistline, but that’s a different story). So I took up the challenge of reverse engineering his favorite pancakes. I think I’ve cracked it!
