I don’t know if with spring coming up it counts as pot pie season, but then again, is there ever really a bad time of year for chicken pot pie? I personally don’t think so. I like to make this recipe after I’ve made a roast chicken and have leftovers.

I like to make this dish with homemade chicken broth on the weekends when I have time to let it slow simmer. It would be great in a Crockpot though if you own one (I don’t amazingly enough.) This was my daughter’s favorite dish when she was little because she really loves olives. Actually, all three kids love olives even though my husband isn’t a fan. My daughter loved them so much she tried to give daddy “mama’s special (oil cured) olies” as a Father’s Day gift when she was two. I tried to explain that perhaps something else would be better, but she loved those olives so much she couldn’t understand why they wouldn’t be a hit.

This is my favorite comfort food. My children refuse to eat my mac and cheese because it doesn’t come from a blue box, but this, we all agree they will eat. It is warm and homey and makes a ton. I like to choose a day when the weather is totally terrible outside anyway and fill the house with the smell of baking chicken. The only thing this recipe takes is time to make. Preparation is straightforward enough. Be careful when adding the broth to the flour/butter mix because it will steam like crazy. I’ve given myself some nasty steam burns this way. Otherwise, it’s easy to make. I serve mine over either hot biscuits or mashed potatoes. Then I freeze whatever’s left for the next day when I just want something warm and hot and bubbling.

Real Homemade Chicken Soup

I wanted soup that was different and really, really good. So I bought a chicken, then roasted and boiled it along with some lovely aromatics for HOURS. And it was so worth it. In the end I had gorgeous, velvety broth that needed only a little bit of pasta and carrots and some of the boiled chicken to turn it into magic. Heck, you could drink this broth straight it’s so flavorful, but I do like the soup below the very best. I’m now hoarding my extra jars of it for the next major snowfall or round of common colds. I’ve even sworn to do better with my chicken carcasses. Now that’s some soup!
