I was wondering what to make for dinner and what to make with those extra bone in breasts. Then I remember the loveliness of baked cacciatore and despite swapping out some of the ingredients as mentioned above, we had this hearty meal. Oh one other oddity, I served this chicken over white rice instead of the traditional pasta because we’ve eaten pasta three times already this week and there are limits.

So it’s cold here. It’s winter and there are officially several inches of snow on the ground. Perhaps as in most families with young children that means cold season has officially arrived and we are being duly hammered with its effects. As a counter offensive, both to ward against the cold and the colds, I’ve been making real, honest to goodness chicken soup out of this lovely chicken broth. Most of the time, I have to admit, my chicken broth comes from those re-sealable boxes. I tell myself that it’s okay and way easier (it’s true, it is) just to use the boxed stuff. But then I make real chicken broth, glowing a glorious yellow, rich with fragrant herbs and gold fat floating on top and I remember why it is that real chicken broth is so much better.

I actually love Indian food, although you could never tell by what I prepare at home. I think because good Indian in my mind is at least two main dishes, plus a side dish bread of some sort I tend not to make it at home. That’s too bad actually because homemade Indian food is so much better for you then what you get at a restaurant. I love eating things like Saag Paneer and Butter Chicken, but I don’t actually want to know how much cream makes them taste as good as they do. When I make it at home I can really control the richness level and calories better.

Homemade Chicken Nuggets

Homemade Chicken Nuggets

This has to be one of my kids’ favorite dishes. This would make sense as what kid doesn’t love chicken nuggets? These nuggets, unlike the drive thru kind feature real chicken breast, which makes for a food even grownups can eat. I often make these as mini nuggets (pictured) because my favorite part is that outside breading and this maximizes that. Probably, that’s bad to admit. The good news is these are totally flexible. You can make mini nuggets like mine. You can make chicken fingers/tenders by just making strips. You can butterfly the chicken breast and then cut 2×2 nuggets which gets you the same breading ratio as my mini nuggets, but a crispier taste overall (a bit like chicken parmesan) The other thing you can do is make these (slightly) healthier by cooking them in the oven vs on the stove top.

If I have one constant, it’s variations on a theme. Tonight’s variation is pasta in a hurry with chicken. We were headed to the school open house for my little girl. She was all excited to see the different classes and we were curious about the building and the staff. However, this event was held from 6:30-7:30, so right after what can only be a very fast dinner (we should be so lucky, the other school was open from 5:30 to 6:30. I couldn’t decide if that was better or worse given both the demands of work and bedtime schedules.) At the same time she’d chosen for her “special treat” at the farmer’s market, pesto of all things the previous week. They had samples out on bread and she decided it was “pretty good”. Normally I make pesto in the summer and make my chicken veggie pasta. However, it’s been months since we’ve had pesto in the fridge.
