So I have this pen pal who lives in Germany and we both love to garden. Well, strictly speaking I loved to garden past tense as it’s been several years since I’ve actually gotten to grown anything. Something, something three kids, something. Anyway, one year we decided to trade seeds (legally I have a small seed lot permit from the USDA) and from America, among other things I decided to send her okra seeds. These were totally a new thing to her and she was stumped what to do with them once they grew like weeds for her. So I sent her a bunch of recipes. I sent my FAVORITE okra recipe ever (and I love okra, especially fried) Johnny Marzetti. (Anyone from Ohio is immediately nodding their head, others are probably like what?), a recipe for gumbo, deep fried okra and this lovely Turkish stew recipe just to show you can be different.

Every year I stare at Thanksgiving and it stares back at me. This is odd when you think about it because I love to cook and I love to experiment and I love to have my kids in the kitchen. However, I don’t normally cook a meal with a main course, four sides, a bread item and three different desserts so perhaps that’s where my trepidation comes from. Regardless, I’m all for anything that makes Thanksgiving a little more predictable and makes the whole enormous turkey thing worthwhile and tasty. I think I have finally found my full bird recipe!

This is a complex dish. I’ll say that right off. However, I try to simplify by making extra filling and then freezing it so that you just need new eggplant and sauce. It’s totally worth it though and is my go to dish when company comes. You can make it in the morning and just put it together an hour or so before they arrive. Then it cooks, quietly waiting for you while you deal with other things and visit.

It’s got to be the perfect recipe as far as my family is concerned (well, not my husband. While he thought it was good in a hearty sort of way, he said it didn’t make his favorites list). My daughter loves beans and anything with beans. My son loves sausage and anything with sausage (he requested his portion be only sausage). My littlest loves everything so he was in as well. We gobbled this up and even have some in the freezer for later in the week. Cheap + tasty =win. It’s got me thinking I might try more New Orleans classics. Gumbo on the soup list anyone? Also next time I’ll make my classic cornbread for a side.
