These are basically chicken Parmesan in meatball form, but without the dryness/toughness problem that you sometimes get with chicken parm. It’s a meatball made of ground up chicken, stuffed with mozzarella, coated in bread crumbs and Italian seasoning, lightly pan fried and then baked to perfection. We had ours with marina sauce for dipping, broccoli, corn and mashed potatoes as the sides. A real dinner that took about 40 mins to make which is doable on a weeknight

So it’s cold outside. I know, this is not a newsflash right? And when it’s cold one should eat proper hearty dishes, things like stews, casseroles and mac and cheese. Comfort food to warm the body and stick to your ribs. With that goal in mind I have finally started making my baked mac and cheese again and I’ve remembered all over again why I enjoy it so much. It’s got a heartier feel to it than regular mac and cheese. One might say this dish is to regular mac as stew is to soup. They are cousins in the same food family, but this is pulling out the big guns against the cold.

This particular dish is a favorite of mine that I just haven’t thought of making in a while. It combines the flavor of pizza sauce with the form of pasta, baked casserole style. Last night I think I finally perfected it.

Everyone give a cheer, tomato glut is here! This is one of my favorite gluts of the year (the others being any kind of locally grown fresh fruit, particularly berries, yum!) I think most people have their go to recipes to use up some of that lovely real tomatoey goodness. My two favorites are tomato soup (which is good enough with canned tomatoes, but out of this world with fresh heirloom tomatoes) and this pasta recipe right here. This is one of the few pasta recipes that is truly seasonal for me.

I love eggplant parmesan. Who doesn’t? It’s meaty without meat, cheesy without a busload of ricotta and, done right, rich without being a brick in your stomach. Plus, it doesn’t require me to remember to defrost, or have bought meat of any kind.
