This is my favorite comfort food. My children refuse to eat my mac and cheese because it doesn’t come from a blue box, but this, we all agree they will eat. It is warm and homey and makes a ton. I like to choose a day when the weather is totally terrible outside anyway and fill the house with the smell of baking chicken. The only thing this recipe takes is time to make. Preparation is straightforward enough. Be careful when adding the broth to the flour/butter mix because it will steam like crazy. I’ve given myself some nasty steam burns this way. Otherwise, it’s easy to make. I serve mine over either hot biscuits or mashed potatoes. Then I freeze whatever’s left for the next day when I just want something warm and hot and bubbling.

Real Homemade Chicken Soup

Real Homemade Chicken Soup

I wanted soup that was different and really, really good. So I bought a chicken, then roasted and boiled it along with some lovely aromatics for HOURS. And it was so worth it. In the end I had gorgeous, velvety broth that needed only a little bit of pasta and carrots and some of the boiled chicken to turn it into magic. Heck, you could drink this broth straight it’s so flavorful, but I do like the soup below the very best. I’m now hoarding my extra jars of it for the next major snowfall or round of common colds. I’ve even sworn to do better with my chicken carcasses. Now that’s some soup!

I’ve decided, as I so often do when faced with challenges, to make soup, potato soup specifically because I seem to be out of a lot of other ingredients around here. This soup is fast to make because boiled, not baked despite the name, potatoes are its base and those can be ready in 20 mins or so. If you happen to have some bacon grease or bacon bits I would totally add them to this soup (I didn’t so they aren’t listed below.)

It’s getting cold out and farmer’s market season is coming to a close. Sad face. Even though I rag on them sometimes I still love going and shopping and talking to people, seeing all of the seasonal produce and snagging new ideas. There is only one week left at the market so I’ve been stocking up on meat from my favorite suppliers. This week I bought a whole chicken with this, a favorite winter chicken dish in mind. I like this recipe because it’s fast enough to use up a whole chicken during the week, yet still makes a great, filling chicken soup.

As we are firmly in the fall season and headed towards winter it seems the perfect time to start once again with my soup postings. This stew is hearty, rich, but not particularly heavy. I love to make it with a side of mashed potatoes (even though it has potatoes already in it) or buttermilk biscuits to sop up the sauce.
