The advantages to this soup, other than the taste and price of ingredients, are the fact that I almost always have the ingredients on hand to make it and that it’s probably the healthiest soup that I make. The only fat comes from olive oil and everything else is good veggies and fiber. I buy lentils occasionally and they keep indefinitely. Carrots, potatoes and canned tomatoes I almost always have on hand so it makes for a good lunch when I have the hour to let it all simmer down.

I love this soup. It’s so not Campbell’s. Is that bad to say? It’s not that I don’t enjoy the classic tomato soup from Campbell’s if the mood is right, but this is so much better. The simplicity is the same, yet the tomato taste is so much more vibrant (and the amount of salt involved is way, way less).

Yeah it’s corn glut time! Okay so strictly speaking it’s way past corn glut time as I write this. The leaves are falling from the trees after all. I’m nothing if not untimely with my recipes, but this is still excellent with frozen corn.

This soup is basically a spin on the classic of chicken noodle soup, but with corn as a key flavoring agent. Mine, you’ll notice, has no chicken, although it certainly could and sometimes does. On the day I made this soup I didn’t happen to have any chicken frozen so there was none added. It’s not vegetarian though because the base stock is chicken. The good news about the lack of meat is that it’s not a long simmering soup. There is nothing to tenderize but the vegetables and those don’t take long at all so it can definitely be a fast weeknight meal.
