Summertime and the cucumbers are cheap, plentiful and fresh at the market. They make a lovely cooling, crisp summer salad. The salad below is one of my favorites to make each summer. It pulls together quickly although you absolutely have to remember to mix the cucumbers with the salt ahead of time. Otherwise they dilute the dressing too much once the salad has sat for a while and then you get soup. This salad keeps for about a day after it’s made. I like to serve it with shashlik or mousaka, but it would be lovely with anything.

Yeah for spring and strawberry season! I corralled my three, mostly willing, helpers (hey there was the promise of ice cream from nearby at the end) and we set off on a grand picking adventure. After the usual hour it took to lotion everyone up and put on hats we set out towards the strawberry fields. The first thing we learned, other than that the berries were plentiful, was that my toddler had no interest in picking. However, he was very interested in the part where you put the berries in the bucket. Lucky for us his older sister agreed to be a team with him. She picked and he dropped the berry into the bucket while his brother struck out for parts unknown in search of the largest berries

Roasted Veggies

Roasted Veggies

This is going to be one of those no brainer recipes that almost doesn’t seem worth posting but I’m going to do it anyway. I love roasted veggies as a side dish to any meal, especially Mediterranean. They are quick to prepare and will happily cook while you make the main course of something else. You can adjust the seasonings to match whatever your central dish is. Personally, I like to roast veggies in just a bit of flavorless vegetable oil, just enough that they don’t stick and then toss with butter, salt and pepper.

Persian Salad

Persian Salad

Kid Friendly Tasks: Dressing Shaker

Technically this is a version of Fatoush which is a salad I totally adore. However, my recipe lacks the awesome croutons of the original generally because I don’t have Middle Eastern bread frequently on hand. That said, you could serve this with any stale (or toasted) strong tasting bread and it would be excellent. I could eat this every day and twice on Sundays.

Baba Ganoush

Anyway, today’s recipe is for a dip that is awesome with carrot sticks or my quick flat bread recipe (that I’ll post soon). I love how you can tweak it to your tastes. Add a dash of red wine vinegar. Make it creamier with Greek yogurt which also makes a great sub for the tahini (although seeds are generally good fat). This keeps several days in the fridge and gets better the next day. Definitely check it out.
