Anyway, today’s recipe is for a dip that is awesome with carrot sticks or my quick flat bread recipe (that I’ll post soon). I love how you can tweak it to your tastes. Add a dash of red wine vinegar. Make it creamier with Greek yogurt which also makes a great sub for the tahini (although seeds are generally good fat). This keeps several days in the fridge and gets better the next day. Definitely check it out.

Cranberry Sauce

This is my best and favorite effort in the cranberry sauce category so far. Most recipes are really more of a cranberry preserve. However, I find that tends to make cranberry sauce bitter from the pulp and seeds mixed in to the sauce. I wanted true jelly instead. Now, you can’t just use pre-bought cranberry juice because it’s the berry skins that give the jelly the needed pectin to jell. I suppose you could add pectin. Anyway, the below was my answer. The key to really good cranberry jelly that even non-cranberry jelly eaters will eat, for example my husband, is to take out the seeds and skin with their accompanying bitter note and add honey because it’s very sweet.

Meanwhile, to make the excellent muffins below you need to know a few small things. One, don’t leave out the preserves or they are a little blah. The recipe is really designed around the muffins as fruit butter carrier so they are not that sweet in and of themselves. They are a slightly heavier muffin because of the oatmeal so again, the preserves are necessary. Two, you can use any flavor of preserves or butter, but don’t use either jam or jelly. Both of those are too sweet in my opinion and will drown out the flavor of the rest of the muffin. A fruit preserve with no added sugar would work really well here.

Fresh Salsa

It’s the end of tomato season and the choices are beginning to look rather run down. That fresh taste of summer is fading once again and we’ll be back to canned tomatoes before you know it. What, other than bruschetta pasta, to do with all of those rather funky tomatoes? Make fresh salsa for a side dish! I never think of fresh salsa and I should. Really, it’s the only kind of salsa I like. The canned kind always tastes terrible to me and you can’t make fresh salsa in the winter because the tomatoes have no taste. Thus my basic fresh salsa below was born.
