It’s easy to make, would taste transcendent with bacon bits (oh yes, bacon) and makes a great, fast side dish to bring to a party. It’s also super simple which makes me love it right there. One thing to keep in mind is that, if you like a lot of dressing, you can double the dressing and it just makes the whole thing creamier still. Also, if you store it until the next day (and it stores well) the cucumbers give up a lot of their juice and dilute the sauce. Bring on summer. The salad is ready. Who needs lettuce leaves?

Black Raspberry Jam

It was pretty miserable and my husband would say, “tell me again why we do this.” So I made jam to answer that question. It was superb. Face it, you cannot get enough black raspberries at a decent price any other way to make jam. And what jam it is! Because of the natural pectin in the berries’ seeds you just mix equal parts berries and sugar, cook until thick and can as you always would. I don’t like Ball’s recipe because it’s a bit too sweet for me. This jam is divine on toast and in cookies. I’m hoping that when we open jars of it, deep in the middle of winter we’ll think fondly back of that warm June day when we all went picking. Pity it didn’t actually happen.

I know, I know, just pop open a can, wash the slime off and be done, right? Why make your own beans when, truth be told they taste very similar (if slightly less mushy) then the ones in the can. Well, because I’m on a South American kick, because I can, because that weird slime they are packed in never quite washes off, because it’s cheaper, because I wanted to try something new.

As you might have noticed by all of the recipes these past few weeks floating around here that contain copious amounts of filo I’m on a Greek kick. I love Greek food because it fools me into thinking I’m eating healthy stuff at least some of the time. Of course if you read the amount of butter that goes into, say my baklava recipe, you’ll know that the jokes on me, but I still enjoy making Greek food.

It’s almost farmer’s market season. I am so excited. Now, I know that sounds strange, given how often I complain about the quality (or lack their of) of their produce vs the price, but I still enjoy the experience of shopping around each year. They, more than the unseasonably warm weather we’re having, are the first sign of spring. In honor of said upcoming markets I’m posting one of my favorite tomato glut recipes. This is truly a market recipe because it tastes far and away the best using fresh market tomatoes that cannot be bought at a grocery store.
