Chicken Filo Squares

As you might have noticed by all of the recipes these past few weeks floating around here that contain copious amounts of filo I’m on a Greek kick. I love Greek food because it fools me into thinking I’m eating healthy stuff at least some of the time. Of course if you read the amount of butter that goes into, say my baklava recipe, you’ll know that the jokes on me, but I still enjoy making Greek food. It’s not too time consuming to prepare and the simplicity really lets the ingredients shine through. In today’s case that means the joy of feta, chicken and rich buttery filo dough. This is another recipe I might alternate with baklava or spinach filo squares simply as a good way to use up the extra filo if needed. In this case however, the recipe below makes enough for one whole set of filo dough. These squares freeze well uncooked so if you get too many you can save some for later. I would also recommend these as party food. Dip them in yogurt dip if you want for extra tang as you serve them.

Kid Friendly Tasks: Brushing on the butter



  • 1 lb ground chicken

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp dill

  • 1/2 tsp mint

  • salt and pepper to taste

  • 1/4 c feta cheese, crumbled

  • 2 tbsp olive oil

  • 4-6 tbsp melted butter

 Makes about 3 cups filling or enough to use up one package of filo dough.



  1. Fry the ground chicken in oil until no longer pink. Turn off heat and add remaining ingredients. Taste for spices and mix thoroughly.
  2. Choose the size square you want. I make mine fist size, but really, you can shape these any way you want to. Put a little bit of filling in the center of two pieces of filo, wrap around the filling, folding like a package and place on a rimmed (to hold in the butter) baking sheet. Repeat until you run out of filo or filling or both.
  3. Brush with melted butter and cook at 350 for 25 mins or until warm brown.
