Chicken Parmesan Meatballs

(Sorry for the lack of posts. The weather’s nice at last so I’ve been playing in the garden.)

Oh guys, these were seriously good. Like, good every single child ate more than one including my baby kind of good (for a little over a year old that kid can really pound down meatballs, provided you break them up. It’s impressive.) I was told that these were definitely one of my better dinners and who doesn’t like getting a gold star from a child. So here’s the scoop. These are basically chicken Parmesan in meatball form, but without the dryness/toughness problem that you sometimes get with chicken parm. It’s a meatball made of ground up chicken, stuffed with mozzarella, coated in bread crumbs and Italian seasoning, lightly pan fried and then baked to perfection. We had ours with marina sauce for dipping, broccoli, corn and mashed potatoes as the sides. A real dinner that took about 40 mins to make which is doable on a weeknight and used up the extra cup of pasta sauce from last night’s dinner that I didn’t know what to do with because it wasn’t enough to use in a second round of pasta. Next time I make these I think I’ll freeze them after they’ve been pan fried and then finish some off either for dinner or to make hoagie sandwiches with. (Italian bread, buttered with garlic butter, layered with marina sauce and filled with these meatballs. Would that not make an awesome 20 min lunch?) I’m hungry again for these. I love when I’m hungry for my own food that I can make whenever I want. Craveworthy.


Serves-3 adults

Reheats-Yes, but do not microwave these


Kid Friendly Tasks-Mozzarella management



  • 1lb ground chicken
  •  1.5 c bread crumbs (roughly) divided, Italian flavored
  •  ½ tsp ground onion
  •  ½ tsp ground garlic
  •  ½ tsp oregano
  •  ½ tsp basil
  •  ½ tsp parsley
  •  ½ tsp black pepper
  •  ½ tsp salt
  •  1 egg
  •  ¼ c Parmesan Cheese
  •  1 ball (fist sized) mozzarella, cut into half inch chunks (You’ll use about half)
  •  ½ tbsp butter
  •  3 tbsp Olive Oil


  1. Preheat oven to 350
  2. In a bowl mix ground chicken, 1/3 c bread crumbs, onion, garlic, oregano, basil, parsley, black pepper, salt, parm cheese, and egg. Mix these ingredients well. Put the remaining bread crumbs in a heap on a plate nearby. Then take about ¼ cup (roughly) of mixture and press a mozzarella chunk in the middle of it. Pat it well around the cheese so that nothing leaks out. Roll the meatball in bread crumbs and set aside. Repeat until all meatballs are made. I think we got roughly 16.
  3. Heat skillet over medium high heat. Add butter and olive oil. Lightly fry meatballs on all sides (about 5 mins total) and then place in oven, if your skillet like mine is oven safe, or in oven safe dish and then in oven for 20 mins.
