Chocolate Caramel Cake

This is my youngest’s chosen birthday cake. He told me that for his birthday he wanted “soup and cake” (apparently we do eat a lot of soup) and the first time I made this cake he and I couldn’t stop eating it. The cake is super sweet because of the caramel swirl layer. I love that part (I keep digging for more caramel), but if you don’t like super sweet cake you might think this is a bit over the top. It’s so rich and creamy it’s almost a pudding cake. Plus, both the caramel and the ganache recipes can be used any time anywhere. Go all the way and add ice cream to the top. You won’t be disappointed. You don’t even need to be turning two years old to have a second portion. I love cake.

Serves 4-6 (not a layer cake)

Cake Ingredients

  • 1 3/4 c flour
  •  1 egg
  •  1 tsp vanilla
  •  1 1/4 c sugar
  •  1/2 c unsweetened cocoa powder
  •  1.5 tsp baking soda (divided)
  •  1.5 teaspoons salt (divided)
  •  1/2 c butter unsalted
  •  4 tbsp butter salted
  •  1/2 c buttermilk
  •  1/4 c cream
  •  1/2 c light brown sugar
  •  2 tbsp light corn syrup

 

Ganache Ingredients

  • 1/2 c chocolate chips
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla
  • pinch salt
  • 3 tbsp light corn syrup

 

Directions

  1. Cake- Cream the unsalted butter with the sugar. Add flour, cocoa, 1 tsp baking soda and 3/4 tsp salt into a bowl. In another bowl beat egg, vanilla and buttermilk. Alternate dry and wet mixes into the creamed butter sugar mix. It should form a thick dough.
  2. Caramel- Melt salted butter over low heat. Add light brown sugar, corn syrup, 1/4 tsp salt. Bring to a low boil, stirring constantly. After 10 mins, over very low heat, remove from heat and stir in 1/4 tsp baking soda. The caramel will foam and bubble. Then add cream and stir.
  3. Preheat oven to 350. Spread half of the cake mix, then all of the caramel, then the other half of the cake mix.
  4. Bake for 25-30 mins.
  5. Ganache-In a microwave safe bowl zap the chocolate and corn syrup until the chocolate is melted, about 30ish seconds. Add the salt, vanilla and heavy cream and mix well to combine. Pour over the top of the cake. It should form a thin chocolate layer on the top. If you like a lot of sauce, double this recipe.
