I can’t believe school is starting already. Fall isn’t in the air, but the backpacks are definitely out of the closet. My “middlest” is off to kindergarten for the first time. I only have one none school aged child left. I find that amazing to believe. Yesterday we walked through and met the teacher, toured the building and, most importantly, checked out the playground. It has plenty of things to climb on and the swings go nice and high so no worries there. If only he didn’t have to switch to two different buses each morning and afternoon to get there. If only it hadn’t taken us four phone calls to confirm that. Sigh. But back to these ice cream sandwich cookies. Per my children’s careful instructions I am test driving various desserts for their lunches (When asked what he wanted for lunch at school my son immediately whipped out a choice of dessert items he’s carefully planning, no other actual meal item need be added.) My daughter has already started to complain about her “wacky” lunch that I pack. Apparently it’s wacky because it’s not 100% dessert and chips like the other children get. Goldfish crackers and a piece of fruit are too healthful, who knew? Anyway, to ramp up for school I made a batch of perfect for lunchboxes chocolate chip cookies. However, I goofed and didn’t use enough flour when making the cookies causing them to spread. This actually turned out to be a happy accident because the day we toured the school/playground it was 89 degrees in the shade and by the time we got home we were both dripping. These thinner cookies made the perfect ice cream sandwich cookie which was a great antidote to the unbearable heat. One last summer dessert before school and fall arrive again.

Note: If you want to make regular chocolate chip cookies up the flour to 1.5 c.

Kid Friendly Tasks: Mixing in the Chocolate Chips



  • 1 1/4 c flour

  • 1/2 tsp baking soda

  • 3/4 tsp salt

  • 1/2 c butter

  • 1/2 c sugar

  • 1/3 light brown sugar

  • 1/2 tsp vanilla extract

  • 1 egg

  • 1 c milk or semi-sweet chocolate chips


  1. Preheat the oven to 375.

  2. Cream the butter and sugars together until light and fluffy (about 5 minutes)

  3. Add the egg and vanilla and continue to mix. Add the salt, then baking soda then flour, finally mix in the chocolate chips.

  4. Drop by spoonfuls onto a baking sheet, being careful to leave space between the cookies as these really spread out.

  5. Bake for about 12 minutes or until cookies are a lovely golden brown. Cool completely and then put a small scoop of just slightly soft ice cream onto the back of one cookie and make your sandwich. Enjoy!
