Creamy Tomato and Cucumber Salad

This salad is so good that I’ve made it twice in the past two weeks (it is tomato and cucumber season after all). The based recipe, which me being me, I tweaked shamelessly come from the site Natasha’s Kitchen. I haven’t tried a whole bunch of her stuff so I can’t comment over all, but this recipe is really fantastic. It’s easy to make, would taste transcendent with bacon bits (oh yes, bacon) and makes a great, fast side dish to bring to a party. It’s also super simple which makes me love it right there. One thing to keep in mind is that, if you like a lot of dressing, you can double the dressing and it just makes the whole thing creamier still. Also, if you store it until the next day (and it stores well) the cucumbers give up a lot of their juice and dilute the sauce. Bring on summer. The salad is ready. Who needs lettuce leaves?

Serves 2-? (just dial up and down the number of cucumbers and tomatoes)

Kids Friendly Tasks: Mixing the dressing and dumping it on the top



  • 3 tomatoes coarsely chopped

  •  2 cucumbers peeled and coarsely chopped

  •  ½ very small onion minced

  •  2 cloves of garlic minced

  •  1/3 c mayonnaise

  •  1/3 c sour cream

  •  1 tsp dill

  •  1 tsp chives

  •  ½ tsp pepper

  •  ½ tsp salt

  •  Splash lemon juice

  •  1 tbsp crumbled bacon



  1. Mix everything. Let sit 15 mins. Enjoy!
