How simple can you get right? It’s chicken. You slice it. Fry it and serve it. For this there’s a recipe? Yeah I know, and you’re probably right, but remember the goal of the blog is to come up with dinner ideas and some nights the most basic thing is exactly what you need. Plus, because it’s so boring it’s one of my kids favor dinners. They, I’m sure, think of this as naked chicken nugget night (although I do make breaded, though not deep fried, chicken nuggets as well). Perhaps I should have titled the post, “one more vehicle for barbeque sauce and ketchup”? Truth in advertising… Anyway, this is a nice recipe because it’s so very fast and it can pair with any side you’ve got (premade frozen green beans, frozen corn, canned baked beans, mashed potatoes (real) and white rice all being popular choices in my house). You could just be 10 minutes from dinner. That is a thought worth a blog post right there.

The only downside of this recipe is to make it a main dish for 4 people you need to make a lot of it and that can get pricy. Think two lbs worth of chicken breast. However, the down side of this is also its upside. Anything you don’t end up eating can be saved and used in a million different ways. I like to use the last little bit cut up and served on pizza or as the chicken part of chicken fried rice. Still, you could put it on pasta or add it to soup which in turn adds a bit of extra variety to everything else in your week. Not bad for basic.

Kid Friend Tasks: Getting the ketchup and barbeque sauce from the fridge

Ingredients

  • 2 lbs Boneless Skinless Chicken Breast
  • Salt and Pepper to taste
  • 2 tbsp Oil

Other possible spices (just pick one or two complementary spices if you’d like):

  • ½ tsp oregano
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp seasoned salt
  • ½ tsp paprika

Directions

  1. Heat skillet over very high heat. Add oil. Take the chicken breast and butterfly it (so cut it in half so that you have two full sized, but half with chicken pieces) it’s okay if the butterfly’s wings don’t end up staying attached during this process. Sear the chicken well on both sides (should take about 4 minutes per side roughly.) Season with extra spices if using.
  2. Sliced into ½ inch ribbons and keep cooking over high heat until everything is cooked through (about 2 minutes more, roughly).
