Ground Chicken Soft Taco Filling

I love soft tacos. They are fast, easy, reasonably cheap and can be loaded with all sorts of goodies particularly avocados (I recently bought avocados just to serve on my tacos only to find that my kids and husband weren’t interested in eating them, tear. It seems I’m the only one who adores avocado in this family which is really too bad given that they are excellent for you. It turns out that the time I was with the kids in the grocery store and they were so excited to buy avocados was because they wanted to plant the pits. We’d just read a book with all sorts of kids gardening ideas (Linnea’s Windowsill Garden if you’re wondering) and in it she starts an avocado tree from a seed. I guess they took that to heart). Anyway, back to soft tacos. I don’t usually make soft tacos with ground beef although you pretty much could using the spice mix below. My husband has a thing against beef, particularly ground beef. He worries about food safety, mad cow disease and red meat in general. That’s a bummer because ground beef is tasty, used in a lot of dishes and goes a long way. Here I turn to my trusty sub of ground chicken which is the same price as ground beef but has fewer health concerns. This mix would also be seriously awesome in burritos, maybe with some mojito sauce, yum! Best of all, you are done with dinner in less than 10 minutes. Add a quick side of Mexican rice (preferably pre-made and frozen) and a healthy dinner is on the table. There should be some sort of reward gold doubloons that appear for parents whenever they tackle a tricky problem like what to do when there is only one of something left and you have three kids or how to make dinner using only aging tortillas, odds and ends from the pantry and your initiative.

  • 1 lbs ground chicken
  •  2 tbsp vegetable oil
  •  1 8 oz can tomato sauce
  •  ½ tsp oregano
  •  1.5 tsp cumin
  •  1 tsp chili powder
  •  ½ tsp coriander
  •  1 tbsp lime juice
  •  1 tsp onion powder
  •  1 tsp garlic powder


  1. In a medium skillet, fry ground chicken in oil over medium heat until cook through about 8-10 minutes.
  2. Add tomato sauce, oregano, cumin, coriander, chili, lime juice, onion and garlic. Cook 2-3 more minutes or until the tomato sauce reduces by more than half and coats the chicken. Taste for salt and pepper and use as you would ground beef taco filling
