Heart-shaped Chocolate Baby Cakes

I got this cute heart shape cake mold at least 15 years ago on a Valentine’s Day whim. At the time I was making things with a Valentine’s Day theme. Now, alas 10 years of marriage and three kids has sort of taken that to a standstill. I still kept the mold though and I did find the time to make these cakes. These are really a light sponge cake, not a brownie, although I like brownies a lot in this pan too. Now I make the little heart cakes for my kids and sometimes fill the center with either cream or frosting. You could also make these with ganache or do my molten center cheat. Cut a Lindt’s chocolate candy, pure chocolate in half and stuff it into the mold in place of homemade ganache. It’s basically the same thing without the mess. One final suggestion is to dress these up with melted chocolate, cream and sweetened condensed milk combined to make a sauce. Pour it over the warm cakes and then invert when you’re ready to serve. While these cakes aren’t super chocolaty, the major plus of this recipe is that you can alter it so many ways. Definitely try it this Valentine’s Day.

Makes 6 cakes

Kid Friendly Tasks: Adding filling

  • 2/3 c chocolate chips (semi-sweet, bittersweet or milk depending on how chocolaty you like it)

  • 1 tbsp cream

  • 3 tbsp butter

  • 2 eggs

  • 1/4 c sugar

  • 1 tsp vanilla

  • 2 tbsp flour

  1. Preheat the oven to 400. Combine chocolate, butter and cream and heat over low heat, just until the chocolate melts. Combine everything and set aside to cool.

  2. Combine, eggs, sugar, and vanilla. Beat for 5 minutes until volume is doubled and the mixture comes off the beaters in fat ribbons.

  3. Gently mix in the flour and chocolate, alternating between the two. Pour into chocolate molds.

  4. Bake for about 10 minutes until just firm, let cool 5 minutes and then invert and serve with ice cream, chocolate sauce, whipped cream, or whatever you want.
