This are my favorite summer dessert for picnics. Something about them being lemonade in bar form perhaps. I love that the keep well and are that bright sunny yellow. Whenever I’m not making smores I’m making these to share. I actually remember the first time I tried lemon bars. We were in speech class and had to give a “how to” speech (mine was how to play the bass. Yes that was about as exciting as it sounds.) My friend Christina’s speech was how to make these lovely cookies after school. At the end of her speech she walked around with samples. No one took one, but since we were friends, I figured I would. Damn I’m glad I did as hers were excellent. The recipe below matches my memory perfectly. She’s right these are a great quick treat to make or share. AND they made a fun speech to watch. Clearly everyone else agrees with me because now we have the cooking channel 24×7

Makes 9 bars

Kid Friendly Tasks: Squeezing the lemons

Ingredients

  • 1 c all purpose flour
  •  1/2 c butter, softened
  •  1/4 confectioner’s sugar
  •  pinch salt

Filling

  • 2 eggs
  •  1 c sugar
  •  2 tbsp flour
  •  1/2 tsp baking powder
  •  2 tbsp lemon juice
  •  1 teaspoon grated lemon peel
  •  pinch salt
  •  sugar for top

Directions

  1. Combine flour, butter, salt and confectioner’s sugar. Pat into an 8 in square baking pan. Bake at 350 for 20 mins.
  2. Meanwhile, in a bowl beat the eggs and then add sugar, flour, baking powder, lemon juice, lemon peel, and salt. Beat until frothy. Pour over crust and bake 25 mins or until light golden brown. Dust with confectioner’s sugar. Cool and cut
