So last night I made meatballs. I really like meatballs even though they aren’t the best for you. I don’t make them often because my husband isn’t a huge fan of them, although both of my children really love them. He does have a point that even the best meatball can be pretty heavy at times. Thus for me they are a winter food. So anyway, I made them and they turned out quite well and tasty and I was pleased as I’d been craving them for a while. That part however, the craving that is, is not my fault though. It’s all my employers fault. You see, since the start of the new year they’ve had big posters up encouraging people to lose weight, develop healthy habits etc etc. And, as it just so happens I am trying to do just that. I need to lose the weight for baby number three so I’ve been trying, only semi successfully it must be admitted, to do just that. However, in service to said campaign the posters are of various foods you should ditch in an effort to cut calories. The poster I walk past every day is of a plate of meatballs and all I can think is, umm meatballs, yeah I want one of those. Not what they were going for, I’m sure. So I made meatballs and we ate half and I froze the rest. No doubt my scale will tell me the damage done. In the meantime, I must say I really enjoyed that dinner and they were so worth it, even as a once a year indulgence. I hope you decide the same.

PS. I froze some extra meatballs and ended up slicing them into wedding soup. Excellent way to have “fast” wedding soup. Perfect lunch!

Kid Friendly Tasks: Shaping the meatballs


  • 1 lb ground meat, mixed pork and beef
  •  1 slice of bread, soaked in milk and shredded finely
  •  1 egg, beaten
  •  1 tsp dried parsley
  •  1 tsp dried chives
  •  1 tbsp butter
  •  3 tbsp Parmesan cheese
  •  ½ tsp salt or to taste
  •  ½ tsp pepper or taste
  •  2 tbsp olive oil
  •  1 onion diced
  •  1 tsp garlic


  1. Mix all of the above ingredients well in a bowl. Shape into standard 1-1.5″ meatballs.
  2. Heat a skillet over medium high heat. Add 3 tbsp olive oil and brown meatballs well on all sides.
  3. Turn down the heat and cook 45 mins or until meatballs are cooked through.

Serve with your favorite pasta sauce or halve and tuck into lasagna. Enjoy!
