Better Then Northstar’s Ricotta Pancakes

Serves: 4

Time: 30 mins

Freezes: Yes

Reheats: Yes

Kid Friendly Tasks: Adding Ingredients

We have a restaurant in town that serves my husband’s favorite pancakes- light, fluffy and very rich. They do a beautiful pancake with banana slices on top and real maple syrup. However, it’s also $11.50 for three pancakes which is seriously steep (it must be those two banana slices on the top that throw them over). You don’t even get bacon! Those prices mean that if we feed me plus the kids we’re suddenly talking $50+ for breakfast and that’s a bit rich for my budget (not to mention my waistline, but that’s a different story). So I took up the challenge of reverse engineering his favorite pancakes. I think I’ve cracked it!

Bruschetta Pasta

Bruschetta Pasta

Serves: 2-3

Time: 5 mins +10 or so to sit

Kid Friendly Tasks: Tomato Chooser

Everyone give a cheer, tomato glut is here! This is one of my favorite gluts of the year (the others being any kind of locally grown fresh fruit, particularly berries, yum!) I think most people have their go to recipes to use up some of that lovely real tomatoey goodness. My two favorites are tomato soup (which is good enough with canned tomatoes, but out of this world with fresh heirloom tomatoes) and this pasta recipe right here. This is one of the few pasta recipes that is truly seasonal for me.

Cajun Tilapia Sandwich

Cajun Tilapia Sandwich

Serves: 2

Time: 25 mins

Kid Friendly Tasks: Pepper Picker

This sandwich, or more specifically a version thereof, is served at the Press Grille along with some chips and loud music. It is seriously trashy, but comes together quickly at home to make. I keep all of the various ingredients on hand mainly frozen and just add them one by one to a single skillet before masterfully dumping them all into a sandwich, which I also serve with chips and loud children. What could be better?

Corn and Noodle Soup

Corn and Noodle Soup

Serves: 4

Time: 10 mins veggie chopping + 20 mins cooking time

Freezes: Yes

Reheats: Well

This soup is basically a spin on the classic of chicken noodle soup, but with corn as a key flavoring agent. Mine, you’ll notice, has no chicken, although it certainly could and sometimes does. On the day I made this soup I didn’t happen to have any chicken frozen so there was none added. It’s not vegetarian though because the base stock is chicken. The good news about the lack of meat is that it’s not a long simmering soup. There is nothing to tenderize but the vegetables and those don’t take long at all so it can definitely be a fast weeknight meal.

Fresh Ricotta

Fresh Ricotta

Serves: n/a

Time: 10 mins + more to drain

I love making my own ricotta. It’s actually a snap to do and then you always have exactly enough fresh ricotta for whatever recipe you’re making with no fillers, stabilizers and other crap included.
