Persian Salad

Technically this is a version of Fatoush which is a salad I totally adore. However, my recipe lacks the awesome croutons of the original generally because I don’t have Middle Eastern bread frequently on hand. That said, you could serve this with any stale (or toasted) strong tasting bread and it would be excellent. I could eat this every day and twice on Sundays. It is that good and always reminds me of spring and young lettuce. Serve along any grilled meat for the perfect Middle Eastern meal.

Kid Friendly Tasks: Shaking the dressing


  • 1 large bunch parsley, finely chopped (or 1 tbsp dried)

  • 2 medium tomatoes, chopped

  • 3/4 c diced cucumber

  • 3/4 diced green onion

  • 1 tbsp dried mint or 1/4 c fresh, chopped

  • 1/3 c lemon juice

  • 1/2 c olive oil

  • dash of salt and pepper

  • 8 olives pitted and chopped

  • 1 tbsp sumac


  1. Mix lemon juice, olive oil, salt, pepper, sumac, and herbs if using dried. Shake well. Put everything in a large bowl and toss well with dressing. Enjoy!
