As it’s January, I feel like I should be typing about how cold it is here, but actually it isn’t. It’s 56 degrees today and before I made this bread I went for a bike ride. It is always weird when the seasons don’t do what they are supposed to, then again who am I to complain about the chance to ride in the middle of winter? Regardless, I still wanted something hearty and winter like for un-dessert. Un-dessert is when you eat something sweet (and this might as well be cake let’s face it for the amount of sugar involved), but it’s not technically dessert. Good banana bread or zucchini bread is the same for me. I love this pumpkin bread as a snack or with tea. It is the epitome of pumpkin dessert flavor in my book, right up there with pumpkin doughnuts (but much less messy to make) and pumpkin pie. I always eat mine with a pat of butter or a dab of cream cheese.

Note: Yes that IS a lot of sugar. No, you cannot cut the sugar in this bread. Just think of it as cake and move on. Every time I attempt to cut the sugar it tastes nowhere near as good and I’m sad. Also, you can make this into a nice muffin using muffin tins.

This recipe halves well. OR, you can use it as a base for some amazing pumpkin bread pudding which is what I like to do.

Ingredients

  • 2 cups sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 1 (16oz) can/2 cups thick pumpkin puree
  • 3 cups all-purpose floor
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon ground cinnamon
  • 2 teaspoon ground nutmeg
  • 1 ½ teaspoons ginger
  • ½ teaspoon baking powder
  • ½ teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 cup walnuts (optional)

Directions

  1. In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well.
  2. Combine dry ingredients; add to the pumpkin mixture slowly, mixing while combining. Pour into two greased 9 in x 5 in x 3 in loaf pans.
  3. Bake at 350 degrees F for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  4. Cool in pans for 10 minutes and then remove to a wire rack to cool completely.

Makes two loaves.
