Chocolate Potica

Chocolate Potica

Serves: 6-8

Time: 2 hrs +rising

Freezes: Yes

Kid Friendly Tasks: Spreading filling

I will start off by saying that you will probably only like this recipe if you like the taste of dark chocolate because it features bittersweet chocolate. However, if you do like dark chocolate you will LOVE it as it tastes rich like a candy bar or nutella. It’s a love it or hate it sort of thing. If you tend to like eastern European sweets that have that dark chocolate bite to them you will totally love this recipe. You’ve been warned. Now the back story. I have a lovely friend who is Slovenian, living in Slovenia, and she mentioned that she makes walnut (the most traditional flavor) potica every year for Christmas and Easter.

Heart-shaped Chocolate Baby Cakes

Heart-shaped Chocolate Baby Cakes

Serves: 6

Time: 25 mins

Kid Friendly Tasks: Adding Filling

I got this cute heart shape cake mold at least 15 years ago on a Valentine’s Day whim. At the time I was making things with a Valentine’s Day theme. Now, alas 10 years of marriage and three kids has sort of taken that to a standstill. I still kept the mold though and I did find the time to make these cakes. These are really a light sponge cake, not a brownie, although I like brownies a lot in this pan too. Now I make the little heart cakes for my kids and sometimes fill the center with either cream or frosting.

Chocolate Caramel Cake

Chocolate Caramel Cake

Serves: 4-6

Time: 45 mins

Kid Friendly Tasks: Swirl Caramel

This is my youngest’s chosen birthday cake. He told me that for his birthday he wanted “soup and cake” (apparently we do eat a lot of soup) and the first time I made this cake he and I couldn’t stop eating it. The cake is super sweet because of the caramel swirl layer. I love that part (I keep digging for more caramel), but if you don’t like super sweet cake you might think this is a bit over the top. It’s so rich and creamy it’s almost a pudding cake.

Double Chocolate Chip Cookies

Double Chocolate Chip Cookies

Serves: Makes 2 dozen

Time: 20 mins

Freezes: Yes

Kid Friendly Tasks: Mixing

My littlest is a total chocolate nut. This is his go-to sweet of choice over all others. In fact he asked for chocolate cake for his birthday and Hershey kisses for his lunch. He was completely crushed when Meijer’s’ (admittedly tragic in my book) free giveaway cookie of the week turned out to be some sort of vanilla cookie with white chocolate chips. White chocolate does not count as chocolate in his book (or mine for that matter. It’s not a bad dessert product, but it’s not chocolate). To soothe his tears, and because I happen to like a good chocolate cookie myself, I proposed this double chocolate cookie instead.

Chocolate Chip Ice Cream Sandwich Cookies

Chocolate Chip Cookie Ice Cream Sandwich Cookies

Kid Friendly Tasks: Mixing

Per my children’s careful instructions I am test driving various desserts for their lunches (When asked what he wanted for lunch at school my son immediately whipped out a choice of dessert items he’s carefully planning, no other actual meal item need be added.) To ramp up for school I made a batch of perfect for lunchboxes chocolate chip cookies. However, I goofed and didn’t use enough flour when making the cookies causing them to spread. This actually turned out to be a happy accident because the day we toured the school/playground it was 89 degrees in the shade and by the time we got home we were both dripping. These thinner cookies made the perfect ice cream sandwich cookie which was a great antidote to the unbearable heat. One last summer dessert before school and fall arrive again.
