In honor of our pumpkin picking and decorating this past weekend I made these pumpkin cookies to take along. Who doesn’t love whoopie pies, especially ones like these, that have marshmallow filling? I liked them so much I used the filling in a pumpkin spiced donut I made as a follow up. Even in 80 degree fall weather, nothing beats a pumpkin treat and cider. Try these out and I think you’ll agree.

My littlest is a total chocolate nut. This is his go-to sweet of choice over all others. In fact he asked for chocolate cake for his birthday and Hershey kisses for his lunch. He was completely crushed when Meijer’s’ (admittedly tragic in my book) free giveaway cookie of the week turned out to be some sort of vanilla cookie with white chocolate chips. White chocolate does not count as chocolate in his book (or mine for that matter. It’s not a bad dessert product, but it’s not chocolate). To soothe his tears, and because I happen to like a good chocolate cookie myself, I proposed this double chocolate cookie instead.

Per my children’s careful instructions I am test driving various desserts for their lunches (When asked what he wanted for lunch at school my son immediately whipped out a choice of dessert items he’s carefully planning, no other actual meal item need be added.) To ramp up for school I made a batch of perfect for lunchboxes chocolate chip cookies. However, I goofed and didn’t use enough flour when making the cookies causing them to spread. This actually turned out to be a happy accident because the day we toured the school/playground it was 89 degrees in the shade and by the time we got home we were both dripping. These thinner cookies made the perfect ice cream sandwich cookie which was a great antidote to the unbearable heat. One last summer dessert before school and fall arrive again.

This are my favorite summer dessert for picnics. Something about them being lemonade in bar form perhaps. I love that the keep well and are that bright sunny yellow. Whenever I’m not making smores I’m making these to share.

These aren’t seasonal, but I actually like pumpkin treats any time of year. Plus, last year I made about 13 jars of pureed pumpkin to freeze and I still have 5 jars left to use up. (Each year I get cheese pumpkins from the farmer’s market, bake them and then puree the pumpkin flesh. It makes the best canned pumpkin you’ve ever tasted. Easy to do once per year and so much better than Libby’s) So I have a couple of different pumpkin cookies I’ve made. One set is a fantastic pumpkin whoopie pie cookie and these are the other.
