Summertime and the cucumbers are cheap, plentiful and fresh at the market. They make a lovely cooling, crisp summer salad. The salad below is one of my favorites to make each summer. It pulls together quickly although you absolutely have to remember to mix the cucumbers with the salt ahead of time. Otherwise they dilute the dressing too much once the salad has sat for a while and then you get soup. This salad keeps for about a day after it’s made. I like to serve it with shashlik or mousaka, but it would be lovely with anything.

Kid Friendly Tasks: Dressing Shaker

Technically this is a version of Fatoush which is a salad I totally adore. However, my recipe lacks the awesome croutons of the original generally because I don’t have Middle Eastern bread frequently on hand. That said, you could serve this with any stale (or toasted) strong tasting bread and it would be excellent. I could eat this every day and twice on Sundays.

It’s easy to make, would taste transcendent with bacon bits (oh yes, bacon) and makes a great, fast side dish to bring to a party. It’s also super simple which makes me love it right there. One thing to keep in mind is that, if you like a lot of dressing, you can double the dressing and it just makes the whole thing creamier still. Also, if you store it until the next day (and it stores well) the cucumbers give up a lot of their juice and dilute the sauce. Bring on summer. The salad is ready. Who needs lettuce leaves?
