It’s the end of tomato season and the choices are beginning to look rather run down. That fresh taste of summer is fading once again and we’ll be back to canned tomatoes before you know it. What, other than bruschetta pasta, to do with all of those rather funky tomatoes? Make fresh salsa for a side dish! I never think of fresh salsa and I should. Really, it’s the only kind of salsa I like. The canned kind always tastes terrible to me and you can’t make fresh salsa in the winter because the tomatoes have no taste. Thus my basic fresh salsa below was born.

Well, because I’m on a South American kick, because I can, because that weird slime they are packed in never quite washes off, because it’s cheaper, because I wanted to try something new.

I have something of a taco theme. This is because tacos are so fast and easy to make on a weeknight, particularly if you’ve made and frozen the meat ahead of time. Today’s recipe is something of a variation on that theme. It is still fast to make and put together, but it bakes in the oven so that takes a bit longer. I think it’s worth it just so that it’s not another fajita taco. This recipe uses the other half of the meat I made for ground chicken tacos a few weeks back.

I love soft tacos. They are fast, easy, reasonably cheap and can be loaded with all sorts of goodies particularly avocados. I don’t usually make soft tacos with ground beef although you pretty much could using the spice mix below. My husband has a thing against beef, particularly ground beef. He worries about food safety, mad cow disease and red meat in general. That’s a bummer because ground beef is tasty, used in a lot of dishes and goes a long way. Here I turn to my trusty sub of ground chicken which is the same price as ground beef but has fewer health concerns. This mix would also be seriously awesome in burritos, maybe with some mojito sauce, yum! Best of all, you are done with dinner in less than 10 minutes. Add a quick side of Mexican rice (preferably pre-made and frozen) and a healthy dinner is on the table.
