Despite the spices listed, it’s actually not at all a spicy dish. It’s sort of a cross between Russian plov and a more Middle Eastern plov. You can sub in chicken for the lamb, but lamb is definitely the traditional meat for the dish. I like the fact that you can reheat it or freeze it as well. It makes a ton and goes amazingly with either green salad or pickled veggies

e have a local Indian recipe that does excellent rice pudding. Actually they do an excellent buffet in general with really good chaat. As with everywhere else going out is…complicated shall we say right now, but I do love rice pudding. Because of this I came up with the recipe below which is totally a ringer for what you get at a typical Indian restaurant. I also make a “Greek” style rice pudding (i.e. no cardamom or coconut, but add cinnamon and butter), but today’s dessert theme is Indian so here you are. I hope you enjoy it as much as we do.

So what to do? Well, make fried rice for lunch of course. The kids will eat something else and this is perfect for one person. I make mine vegetarian, but you could add any meat you have on hand. The classic addition of course is shrimp, which I love, but don’t ever quite seem to buy for whatever reason. Anyway, this cooks in 5 mins or so and we always have the basic ingredients on hand. This is your lunch today, just trust me.

It’s got to be the perfect recipe as far as my family is concerned (well, not my husband. While he thought it was good in a hearty sort of way, he said it didn’t make his favorites list). My daughter loves beans and anything with beans. My son loves sausage and anything with sausage (he requested his portion be only sausage). My littlest loves everything so he was in as well. We gobbled this up and even have some in the freezer for later in the week. Cheap + tasty =win. It’s got me thinking I might try more New Orleans classics. Gumbo on the soup list anyone? Also next time I’ll make my classic cornbread for a side.

So it was taco night again. Three cheers for easy and fast tacos to the table. Last night’s version was fish tacos. These are especially nice because you can start with frozen fish fillets and therefore do not need to plan ahead. Win! However, last night in addition to the usual side dish of corn, I decided to try something new. Below is my take on Spanish or Mexican rice, basically rice with similar flavoring to tacos etc.
