This is my take on classic cheesecake, every rich decadent mouthful. I make this roughly once per year because it is so rich and decadent. Often it is my husband’s birthday cake and works particularly well for his Christmas birthday because it isn’t holiday themed. I also use it as a base layer for whatever “flavored” cheesecake you want, strawberry topped, add a swirl of homemade caramel, top with banana slices, chocolate curls, a sprinkle of pie spice. It makes the perfect palette.

The secret to these is a lot of cheese and very little sauce. I make my regular sauce recipe but just dip my calzone in it when they’re finished. I use a lot of the different cheeses and just a hint of veggies and pepperoni. I haven’t included quantities here because it’s very much about what you love to add. Sausage for example would be amazing in these. Just add slightly less filling then you think looks right, fill with your favorites (or my favorites below), crimp and enjoy.

We have a restaurant in town that serves my husband’s favorite pancakes- light, fluffy and very rich. They do a beautiful pancake with banana slices on top and real maple syrup. However, it’s also $11.50 for three pancakes which is seriously steep (it must be those two banana slices on the top that throw them over). You don’t even get bacon! Those prices mean that if we feed me plus the kids we’re suddenly talking $50+ for breakfast and that’s a bit rich for my budget (not to mention my waistline, but that’s a different story). So I took up the challenge of reverse engineering his favorite pancakes. I think I’ve cracked it!

These are my daughter’s favorite pancakes. Now, you would think that’s because they are awesome and tasty, with healthful blueberries sprinkled about, but in fact, it’s because they are blue and that’s her very favorite color.
